How to shuck an oyster

Right after the conclusion of the 2007 Boston Seafood Exhibit, I was able to visit the pond site of Moonstone Oysters at Point Judith, Wakefield, Rhode Island. In addition to showing me how oysters were harvested, Graham Brawley, Sales Manager of Moonstone Oysters, graciously showed two ways to shuck an oyster

P1010037 Graham holds a pair of gourmet size Moonstone oysters that yield meat with an outstanding full-bodied sweetness, with just a tinge of briny flavor.
